I am having technical difficulties on photos again, but here's what I made!
Dual Cheese Broccoli Soup
1/4 tbsp butter
1 cup cooked broccoli florets, chopped very small
1Tbsp all-purpose flour
1 cup chicken broth
1/4 tsp. mustard
1/2 cup milk
1 oz muenster cheese
1-2 oz cheddar cheese
salt and freshly ground pepper, to taste
In a large pot, melt butter over medium heat. Add broccoli and cook 2-3 more minutes. Lower heat, add flour, and cook, stirring, 3-4 minutes, without browning. Add chicken broth and mustard and raise heat to bring to boil. Lower heat and simmer about 5 minutes. Add milk. Bring to simmering point and simmer another 5 minutes. Add cheese, and stir until melted. Salt and pepper to taste.

How did that go down with the kids?
I don't know if the kids would have liked it or not. This was my lunch, I made it after the kids went to sleep :) They are having some spinach (with other veggies) soup to try tomorrow, though!
Oh, good luck with that. My good eater, you know the one, tried cooked spinach the other night...promptly did a full body shiver and tried to wash it down with her drink. I took pity on her and let her spit it out in a napkin.
